Perfect
Beef Stir-Fry
(
Four Serving )
Ingredients:
- 3/4
lb. of beef - top round steak
-
2 carrots - thinly sliced on diagonal
- 3
cups of cabbage - sliced
- 1/4
cup of green onions - chopped
- 1/2
cup of red onions - chopped
- 1
tblsp of gingerroot - fresh and minced
- 1/4
tsp. of curry powder - medium
- 1/2
tsp. of black pepper
- 1
tsp. of garlic - fresh and minced
- 4
tbsp. of vegetable oil
- 1/2
tbsp. of cornstarch
- 1/4
tbsp. of sea salt
- 1/2
tbsp. of brown sugar
- 2
tbsp. of Soya sauce
- 2
tbsp. of red vinegar
- 4
tbsp. of water
Instructions:
- Slice
meat diagonally across the grain into thin strips and put it inside
a sandwich plastic bag.
- Spice
mixture: combine garlic, curry powder, pepper, Soya sauce and
vinegar; add half of the mixture to the meat. Close the bag and
let it marinate for 10 minutes.
- In
large nonstick skillet, add 2 tbsp of oil. Heat it over medium
heat for 1 minute.
- Increase
heat to high. Add beef and stir-fry for 2 minutes or until browned
yet still pink inside. Transfer to plate.
- Reduce
heat to medium and add 2 tbsp of oil. Add remaining spice mixture,
carrots, cabbage and red onions; cook, stirring, for 1 minute.
Add 2 tbsp of water, mixing well; cover and simmer for 3 minutes.
- Mix
2 tbsp of water with cornstarch; stir into pan along with green
onions, salt, sugar. Simmer, stirring constantly, for 2 minutes
or until vegetables are tender. Stir in beef and juices, stirring
for 2 minutes.
Makes
4 servings with rice or bake potato.
