Cucumber
Tuna Salad
(
2 Servings )
Ingredients:
- English
cucumber, thinly sliced -- 1 large
- Tuna,
chunk -- 1 can
- Salt
and pepper -- To taste
- 1
small onion, diced and wash
- Nonfat
plain yogurt -- 2 cups
- Garlic
powder -- 1 tablespoon
- Grated
Parmesan cheese -- 2 tablespoons
Instructions:
- Arrange
cucumber slices in a single layer in the bottom of a bowl. Sprinkle
with salt and pepper. Add a layer of onions with tuna, and top
with a layer of yogurt.
- Continue
layering all the remaining cucumbers, onions, and yogurt this
order. Top off with a final layer of yogurt. Sprinkle with garlic
powder, and parmesan cheese. Cover and refrigerate for 1 hour
before serving.
Important:
Make this salad the night before and keep it in the fridge. In the
morning transfer each serving in a plastic container and take it
with you for lunch.
