CHICK
PEA SALAD (2 SERVINGS) This
simple recipe is ideal for lunch. It is best to mix all the ingredients 10 minutes
before serving. Ingredients:
- Chick
Peas /Garbanzo Beans (2 cups, cooked the day before and cooled overnight in the
refrigerator)
- Canned
Tuna (200g)
- Celery
(1stick)
- Juice
of lemon (2 tbspn)
- Plain
Yogurt (2 tbspn)
- Mustard
(1/2 tspn)
- Mayonnaise
(1 tbspn)
- Salt,
pepper (to taste)
Directions:
- Chop
celery into fine pieces.
- In
a bowl, mix with tuna, chick peas and lemon.
- In
a small cup, mix the yogurt, mustard, mayonnaise, salt and pepper.
- Add
all ingredients together and mix.
Note:
Ideally, served it with fresh lettuce or spinach. Buen
apetito!
